"veg*n" means "vegan or vegetarian". It's used just because it's a conveniently short way of saying "vegan or vegetarian". Explanation: In several computer operating system command languages, the asterisk character ("*") is used as a "wildcard" character, meaning that it substitutes for zero or more arbitrary characters.
