Bring up the volume control (the icon that looks like a knob).
Go to the Output tab, and find the non-USB device (the device that does
not have "USB" in its name).  On the right, there is a checkmark.  Click
it.  It will set that device as the fallback device.
I'm not sure why it doesn't remember the fallback audio device.  I'll
stick it on my todo list.
