You could try http://fluxbuntu.org .
Damn Small Linux (http://damnsmalllinux.org ) has an option to install
onto a hard drive (see
http://damnsmalllinux.org/wiki/index.php/Installing_to_the_Hard_Disk ),
but it looks like a bit of a pain.  But, it's based on Debian and will be
easy to upgrade as necessary.
