I have of late decided that having a low-fat diet has contributed to my RSI. Therefore, I recommend against a low-fat diet for the time being. I have been trying the "essential fatty acids", i.e., flaxseed oil. I am therefore no longer low-fat. I think this has helped to an extent. Good luck.
